SO Coffee Roasters – Colombia 250g

Heiner and his wife Johanna lived on a neighboring plantation where they already produced coffee, and 25 years ago they bought the EL RUBI farm where this pink bourbon is planted. The coffee processing is carried out in two fermentation stages. One is done with the cherries in carbonic maceration for 36 hours and you get a light depulping process. Then it goes into temperature controlled anaerobic fermentation for 24 hours and then ferments in the sun for approximately 14 to 18 days.
